The expiration date is clearly printed on all Mountain House products and is easy to decipher. For instance lets say the date mark is as follows: "99030 EJC" The first 2 digits represent the year 99 for 1999 and 01 for 2001 and so on. The next 3 digits represent the day of the year it was manufactured, so 030 would mean the 30th day of the year which would be January 30th. The last letters are just the Production Operators initials for quality control tracking.

Freeze-dried foods can be stored at room temperature, without deterioration or spoilage. This is because freeze-drying and packaging remove both water and oxygen, the two primary causes of food deterioration. Mountain House, backpacking and survival products are packed immediately in a unique moisture and "oxygen barrier" packaging to preserve the food's flavor, texture, color, and nutrients. To "double" ensure freshness and prevent the food from going bad, an oxygen scavenger packet is placed in each pouch. The oxygen scavenger consists of iron oxide, which absorbs oxygen inside the pouch. This product is not harmful to your health, but is not meant to be consumed.

I love mountain house foods and have been using them for quite some time now on camping trips. I also have a pretty good supply of the number ten cans on hand stored just in case of an emergency also. I have to admit I have even used them for dinner because I really love them, especially the Jamaican style chicken and rice.
